Ingredients:
- 4 cups cooked white rice, chilled
- 2 tablespoons vegetable oil
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced bell pepper
- 1/2 cup frozen peas, thawed
- 1/2 cup cooked ham, diced
- 2 large eggs, lightly beaten
- 1/4 cup ketchup
- 2 tablespoons soy sauce
- 1/4 teaspoon garlic powder
- Salt and pepper, to taste
- Green onions, sliced (optional)
Instructions:
- In a large skillet or wok, heat the vegetable oil over high heat.
- Add the diced onion, celery, and bell pepper to the skillet and stir-fry for 2-3 minutes, or until the vegetables are slightly softened.
- Add the peas and ham to the skillet and stir-fry for another 1-2 minutes, or until the ham is heated through.
- Push the vegetables and ham to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until they are cooked through.
- Add the chilled cooked rice to the skillet and stir-fry everything together for 2-3 minutes, or until the rice is heated through and slightly crispy.
- In a small bowl, whisk together the ketchup, soy sauce, garlic powder, salt, and pepper.
- Pour the sauce over the rice and stir-fry for another 1-2 minutes, or until everything is well combined and heated through.
- Garnish with sliced green onions, if desired.
