Ingredients:

  • 4 cups cooked white rice, chilled
  • 2 tablespoons vegetable oil
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced bell pepper
  • 1/2 cup frozen peas, thawed
  • 1/2 cup cooked ham, diced
  • 2 large eggs, lightly beaten
  • 1/4 cup ketchup
  • 2 tablespoons soy sauce
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste
  • Green onions, sliced (optional)

Instructions:

  1. In a large skillet or wok, heat the vegetable oil over high heat.
  2. Add the diced onion, celery, and bell pepper to the skillet and stir-fry for 2-3 minutes, or until the vegetables are slightly softened.
  3. Add the peas and ham to the skillet and stir-fry for another 1-2 minutes, or until the ham is heated through.
  4. Push the vegetables and ham to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until they are cooked through.
  5. Add the chilled cooked rice to the skillet and stir-fry everything together for 2-3 minutes, or until the rice is heated through and slightly crispy.
  6. In a small bowl, whisk together the ketchup, soy sauce, garlic powder, salt, and pepper.
  7. Pour the sauce over the rice and stir-fry for another 1-2 minutes, or until everything is well combined and heated through.
  8. Garnish with sliced green onions, if desired.
