Palestinian Foul Recipe

This is a recipe for Palestinian Foul, a nutritious and flavorful dish made with fava beans:

Ingredients:

  • 2 cups dried fava beans
  • 4 cups water
  • 1/4 cup olive oil
  • 1 onion, diced
  • 4 cloves of garlic, minced
  • 2 tomatoes, diced
  • 1 tsp. cumin, ground
  • 1 tsp. paprika, ground
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • Juice of 1/2 lemon
  • Chopped fresh parsley, for serving
  • Hard-boiled eggs, for serving (optional)

For serving:

  • Warm pita bread

Instructions:

  1. Soak the fava beans in water overnight, or for at least 6 hours.
  2. Drain the soaked fava beans and rinse them well.
  3. In a large pot, add the fava beans and 4 cups of water. Bring to a boil, then reduce the heat to low and simmer for 45 minutes, or until the beans are soft.
  4. While the fava beans are cooking, prepare the seasoning. In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until softened.
  5. Add the minced garlic to the skillet and sauté for another minute.
  6. Add the diced tomatoes to the skillet and stir well.
  7. Add the cumin, paprika, salt, and black pepper to the skillet and stir well.
  8. Cook the tomato mixture for 5-7 minutes, or until the tomatoes have softened and released their juices.
  9. When the fava beans are done, drain them and return them to the pot.
  10. Pour the tomato mixture over the fava beans and stir well.
  11. Add the lemon juice to the pot and stir well.
  12. Cook the fava beans and tomato mixture over medium heat for 5-10 minutes, or until the mixture has thickened slightly.
  13. Serve the foul hot, garnished with chopped fresh parsley and hard-boiled eggs (if using), along with warm pita bread.
