This is a recipe for Palestinian Foul, a nutritious and flavorful dish made with fava beans:
Ingredients:
- 2 cups dried fava beans
- 4 cups water
- 1/4 cup olive oil
- 1 onion, diced
- 4 cloves of garlic, minced
- 2 tomatoes, diced
- 1 tsp. cumin, ground
- 1 tsp. paprika, ground
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- Juice of 1/2 lemon
- Chopped fresh parsley, for serving
- Hard-boiled eggs, for serving (optional)
For serving:
- Warm pita bread
Instructions:
- Soak the fava beans in water overnight, or for at least 6 hours.
- Drain the soaked fava beans and rinse them well.
- In a large pot, add the fava beans and 4 cups of water. Bring to a boil, then reduce the heat to low and simmer for 45 minutes, or until the beans are soft.
- While the fava beans are cooking, prepare the seasoning. In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until softened.
- Add the minced garlic to the skillet and sauté for another minute.
- Add the diced tomatoes to the skillet and stir well.
- Add the cumin, paprika, salt, and black pepper to the skillet and stir well.
- Cook the tomato mixture for 5-7 minutes, or until the tomatoes have softened and released their juices.
- When the fava beans are done, drain them and return them to the pot.
- Pour the tomato mixture over the fava beans and stir well.
- Add the lemon juice to the pot and stir well.
- Cook the fava beans and tomato mixture over medium heat for 5-10 minutes, or until the mixture has thickened slightly.
- Serve the foul hot, garnished with chopped fresh parsley and hard-boiled eggs (if using), along with warm pita bread.
