Sugar Free Banana Bread

Ingredients:

  • 3 ripe bananas, mashed
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsweetened applesauce
  • 1/4 cup honey
  • 1/4 cup chopped walnuts (optional)

Directions:

  1. Preheat your oven to 350°F (180°C). Grease a 9×5 inch loaf pan.
  2. In a large mixing bowl, combine the mashed bananas, vegetable oil, eggs, and vanilla extract. Mix well.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  4. Add the dry ingredients to the banana mixture and stir until just combined.
  5. Add the applesauce, honey, and chopped walnuts (if using) to the batter and stir until well combined.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  8. Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
