Chicken Musakhan Recipes

This is a recipe for chicken musakhan, a traditional Palestinian dish:

Ingredients:

For the chicken:

  • 1 whole chicken, cut into pieces
  • 1/4 cup olive oil
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the musakhan:

  • 4 large onions, thinly sliced
  • 1/4 cup olive oil
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup pine nuts
  • 6-8 large pieces of Arabic flatbread (pita bread can also be used)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the olive oil, cinnamon, allspice, cardamom, cumin, paprika, salt, and pepper. Add the chicken pieces and toss until fully coated.
  3. Place the chicken on a baking sheet and bake for 40-45 minutes, or until fully cooked.
  4. While the chicken is baking, prepare the musakhan. In a large skillet, heat the olive oil over medium heat.
  5. Add the sliced onions and sauté for 10-15 minutes, or until they’re soft and golden brown.
  6. Add the cinnamon, allspice, cardamom, cumin, salt, and pepper to the skillet. Stir well to combine.
  7. Add the pine nuts to the skillet and cook for an additional 2-3 minutes, or until they’re lightly toasted.
  8. Once the chicken is fully cooked, remove it from the oven and let it rest for 5-10 minutes.
  9. To assemble the musakhan, place the flatbread on a baking sheet. Spread the onion mixture over the flatbread, leaving a small border around the edges.
  10. Place the chicken pieces on top of the onion mixture.
  11. Bake the musakhan in the oven for 10-15 minutes, or until the flatbread is lightly toasted and the chicken is heated through.
  12. Remove the musakhan from the oven and let it cool for a few minutes before serving.
