This is a recipe for chicken musakhan, a traditional Palestinian dish:
Ingredients:
For the chicken:
- 1 whole chicken, cut into pieces
- 1/4 cup olive oil
- 1 teaspoon ground cinnamon
- 1 teaspoon ground allspice
- 1 teaspoon ground cardamom
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the musakhan:
- 4 large onions, thinly sliced
- 1/4 cup olive oil
- 1 teaspoon ground cinnamon
- 1 teaspoon ground allspice
- 1 teaspoon ground cardamom
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup pine nuts
- 6-8 large pieces of Arabic flatbread (pita bread can also be used)
Instructions:
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the olive oil, cinnamon, allspice, cardamom, cumin, paprika, salt, and pepper. Add the chicken pieces and toss until fully coated.
- Place the chicken on a baking sheet and bake for 40-45 minutes, or until fully cooked.
- While the chicken is baking, prepare the musakhan. In a large skillet, heat the olive oil over medium heat.
- Add the sliced onions and sauté for 10-15 minutes, or until they’re soft and golden brown.
- Add the cinnamon, allspice, cardamom, cumin, salt, and pepper to the skillet. Stir well to combine.
- Add the pine nuts to the skillet and cook for an additional 2-3 minutes, or until they’re lightly toasted.
- Once the chicken is fully cooked, remove it from the oven and let it rest for 5-10 minutes.
- To assemble the musakhan, place the flatbread on a baking sheet. Spread the onion mixture over the flatbread, leaving a small border around the edges.
- Place the chicken pieces on top of the onion mixture.
- Bake the musakhan in the oven for 10-15 minutes, or until the flatbread is lightly toasted and the chicken is heated through.
- Remove the musakhan from the oven and let it cool for a few minutes before serving.
